Le Haut des Champs is the Bourgogne Blanc from Domaine Jean-Marc Pillot, the Chassagne-Montrachet estate whose cellars sit on the lane of the same name. Made entirely from Chardonnay, it is the entry point to the domaine's range and an approachable introduction to the house style.
In the glass it is fresh and precise, with lemon, green apple and pear, a touch of white flowers and a clean, chalky finish. It is built for drinking over its first few years, when its crisp fruit and lively acidity are at their most vibrant, and works well with seafood, roast chicken or soft cheeses.
Jean-Marc Pillot represents the fourth generation of his family in Chassagne-Montrachet and has directed the domaine since 1991, with his son Antonin now part of the team. The estate is known for a lean, fresh and transparent style of white Burgundy, and this Bourgogne is made with the same hand-harvested fruit and careful approach as the village and premier cru wines.
