Benjamin Guilbert started in 2020 with just a few vineyards, taking the best ancestral methods (hand bottling, horse ploughing where possible) and innovative techniques to elaborate wines of grace and precision. Whether it is some of the vineyards trained in "echalas" or the strict viticulture to yield little but fully concentrated grapes, to destemmed long cuvaison techniques, the wines are upfront very delicious, and have that fragile floral aromatic so difficult to find in Pinot Noir these days. A long elevage is provided to the wines, and everything is bottled by gravity, by hand, on a suitable lunar cycle.
