A Premier Cru red Burgundy from Domaine Pavelot (Jean-Marc & Hugues), the family estate in Savigny-lès-Beaune whose roots in the village trace to the French Revolution. The domaine is now run father-and-son by Jean-Marc and Hugues Pavelot, working around 12–13 hectares across Savigny with plots also in Beaune and Aloxe-Corton.
100% Pinot Noir from the Les Dominodes Premier Cru, a 2.2-hectare holding where two-thirds of the vines are 70–80 years old and the remaining vines are 20+ years. Les Dominodes is typically the estate's benchmark wine - darker-fruited, more floral, more structured and built to age, with ripe dark berries, anise and newly-turned earth on the nose, and a dense, sleek, mineral-driven palate that's powerful, compact and wonderfully persistent.
Farmed using 'lutte raisonnée'. Grapes are destalked without crushing, given a cool 2–3 day maceration, and fermented in wooden tanks for the 1er crus. Aged with around 30% new oak.
