Aux Beaux Bruns is one of the more powerful and broad-shouldered of Ghislaine's cuvees, drawn from a parcel of old vines. Vinified with partial destemming and natural yeasts before ageing in barrel, it shows the perfume and elegance for which Chambolle is famous, with red cherry, raspberry and dark berry fruit lifted by rose, violet and subtle spice. The palate is silky yet structured, with fine tannins, fresh acidity and a long, fragrant finish.
A lovely match for duck, game birds, roast veal or mushroom dishes, as well as soft, washed-rind cheeses. Decant briefly and serve slightly cool to highlight its finesse.
