Aux Combottes is a Premier Cru vineyard at the southern end of Gevrey-Chambertin, bordering Morey-Saint-Denis and sitting just below the Grands Crus Latricières and Mazoyères-Chambertin. Domaine Dujac holds approximately 0.7 hectares on shallow limestone with red clay over Bathonian bedrock — a terroir that produces wines leaning more perfumed and fine-boned than the muscular northern Gevrey Premier Crus.
Farmed organically and biodynamically, the wine is made with Dujac's signature high proportion of whole-bunch fermentation using indigenous yeasts, then aged 14 to 18 months in French oak. The result is a floral, Morey-esque expression of Gevrey with elegance and aromatic complexity, spice-tinged fruit and silky, refined tannins.
