Ciavolich is a long-established Abruzzo winery with a history stretching back centuries, based in the hills of the Pescara province on Italy's Adriatic side. Fosso Cancelli is the estate's flagship line, and this bottling showcases Pecorino, an ancient central Italian white grape enjoying a well-deserved revival.
Pale straw in the glass, it opens with an intensely aromatic bouquet of white flowers, ripe peach and melon, layered with citrus, a hint of almond and a distinct mineral thread. On the palate it is taut and vibrant, its bright acidity framing a textured, savoury core.
Fresh, mineral-driven and lingering, it finishes long and gently saline. A characterful Italian white that pairs naturally with seafood, grilled fish and antipasti.
