Tenuta delle Terre Nere, founded by Marc de Grazia, works a collection of old vineyards across the northern slopes of Mount Etna and bottles the best of them as single-contrada wines. Guardiola, in the commune of Castiglione di Sicilia, is one of its Premier Cru sites and among the highest vineyards in the Etna DOC, reaching 900 to 1,000 metres.
The Nerello Mascalese vines are between 90 and 120 years old and grow in lean volcanic soils of sand and basaltic gravel with a little ash. The altitude produces an intense, austere Etna Rosso with high acidity, firm tannins and a rigorous mineral core beneath red fruits, herbs and spice. It is tightly wound in youth and takes time to unfurl, softening with age while keeping its structure and vigour.
Pair with braised or stewed dishes such as rabbit alla cacciatora, hare, or sausages with beans.
