Henri Chauvet gave up a career in banking and insurance to make wine, taking a viticulture and oenology qualification by correspondence and then learning his craft alongside Thierry Allemand in Cornas and Jérôme Bressy at Domaine Gourt de Mautens in Rasteau. In the spring of 2021 he settled in Boudes, in the southern Auvergne, where he farms around ten and a half hectares on some of the steepest volcanic hillsides in France.
Échappée Belle is one of the reds in his range, built on the Gamay and Pinot Noir that dominate his high volcanic parcels. Soils shift between red clay in the valley floor and dark basalt earth on the slopes, and every plot and variety is fermented separately. Chauvet works with indigenous yeasts, whole bunches and very little else, bottling unfined and unfiltered. As he puts it, he is neither natural nor conventional, and does not want his philosophy in the cellar to overshadow his terroir.
The result is a red full of energy. Crunchy red cherry, cranberry and wild raspberry are cut with black pepper, dried herbs and a distinct smoky, volcanic mineral streak, with light, sappy tannins and a finish that is fresh and moreish. Serve it lightly chilled with charcuterie, roast pork or grilled vegetables.
