Pierre-Yves Colin-Morey is one of the most sought-after names in modern white Burgundy, with a tightly farmed estate based in Chassagne-Montrachet. The house style is built on long, cool, reductive élevage in lightly toasted oak, an approach that has come to define a generation of mineral, age-worthy white Burgundies. Les Baudines is an elevated premier cru on the upper, limestone-rich slopes of Chassagne.
The 2023 is high-toned, crystalline and quietly powerful. Yellow plum, lemon zest and jasmine lead into a palate of citrus and orchard fruit, threaded through with saline minerality and a fine, smoky reduction. The finish is long, focused and chalky, with the kind of cellar potential the village's best wines are known for.
Worth giving time in the cellar; pair young with raw shellfish, scallop crudo or buttery roast capon.
