Domaine Joseph Colin is the estate of Joseph Colin, son of the celebrated Marc Colin, who set out on his own from 2017 with a small holding of vines based in Saint-Aubin. He works gently in the cellar, fermenting with indigenous yeasts and ageing the wines in mostly older barrels before bottling unfined and unfiltered, letting each terroir express itself.
Les Murgers des Dents de Chien is one of Saint-Aubin's most celebrated Premier Cru sites, sitting high on a limestone plateau above En Remilly and close to the great vineyards of Puligny. The old vines here, grown on rocky, limestone-rich soil, give a Chardonnay of real energy and tension, combining ripe citrus and orchard fruit with a firm mineral spine and a long, precise finish.
Serve well chilled but not ice cold so its depth can show. It pairs beautifully with shellfish, grilled fish, roast poultry and creamy cheeses.
