Jean-Marc Pillot's Chassagne-Montrachet Blanc is the domaine's largest white cuvée, assembled from a handful of small parcels scattered across the village appellation. The vines range from plantings of the mid twentieth century through to younger replantings, and blending sites from different parts of Chassagne gives the wine a complete, rounded picture of the village.
Expect a bright, mineral style of Chassagne, with citrus, green apple and white peach, hints of hazelnut and almond as it opens, and a tense, salty line through the finish. It is generous enough to enjoy young yet has the freshness to develop over several years.
The Pillot family has farmed in Chassagne-Montrachet for four generations, with Jean-Marc at the helm since 1991 and his son Antonin now working alongside him. The grapes are picked by hand and fermented with indigenous yeasts, and since 2021 most of this cuvée has been raised in larger 350 litre barrels with a small portion in foudre, keeping oak influence gentle before a final period in tank ahead of bottling.
