Domaine Camille et Guillaume Boillot is a young family project launched in 2019 by Guillaume Boillot, who trained alongside his father Henri Boillot, and his wife Camille, the fifth generation of a vine-growing family from Pommard. This Bourgogne Chardonnay carries the lieu-dit name Corvee aux Moines, a parcel on clay soils studded with pebbles in the lower reaches of Puligny-Montrachet.
The fruit is farmed without pesticides or insecticides and fermented naturally in seasoned oak barrels, with no batonnage, an approach that preserves clarity and freshness. The result is a precise white showing a pale lemon hue, aromas of green apple and delicate floral notes, and a palate marked by citrus, white apple and a clear mineral line.
Serve well chilled as an aperitif or with grilled fish, roast chicken or creamy soft cheeses. Its energy and purity make it a versatile partner at the table.
