Bénédicte et Stéphane Tissot run a leading Jura estate in Arbois (formerly Domaine André et Mireille Tissot), farming around 45-50 hectares. The estate has been certified organic since 1999 and biodynamic (Demeter) since 2004, with Stéphane working terroir by terroir to produce intensely site-driven wines.
Arbois Trousseau Singulier is crafted from Trousseau from five different parcels on Bajocian limestone scree over lias clay, with oldest vines dating back to the 1930s. Unlike much of the Jura, Tissot favours a reductive rather than oxidative style, often destemming to showcase the purity and freshness of the fruit.
In the 2022 vintage, around three-quarters of the bunches underwent carbonic maceration for three weeks, followed by a week of gentle plunging, while the remaining quarter was destemmed and spent three months macerating in ancient foudres. The two components are later blended and rested briefly in barrel. The result is a light, lifted and aromatic Trousseau with peppery peony, floral notes, fresh berry fruit and a velvet-like structure reminiscent of Pinot Noir with hints of orange peel. Alcohol is around 14.5%.
