Domaine Francois Millet et Fils is a small family operation based in Chambolle-Musigny, founded by Francois Millet and his son Julien. Francois spent decades at the helm of a celebrated Chambolle estate before setting out under his own name, and this Bourgogne Hautes-Cotes de Nuits draws on relationships built across a lifetime in the vineyards of the Cote de Nuits. The fruit comes from higher, cooler ground above the famous slope, where rockier soils and excellent drainage lend the wine freshness and lift.
This is a red Burgundy made from Pinot Noir, fully destemmed and raised without new oak so the fruit and minerality stay to the fore. Expect a bright, perfumed style with red cherry and wild berry character, fine-grained tannins and a savoury, mineral thread that keeps everything elegant and poised rather than heavy.
Serve it lightly chilled on a warm day or at cool cellar temperature, alongside roast chicken, duck, mushroom dishes or a board of soft and washed-rind cheeses. A gentle decant helps it open.
