Applejack sits in the Upper Yarra on basalt derived volcanic soils, and it is one of the sites that helped establish Giant Steps as a leading name for cool climate Pinot Noir. Where some of the winery's other vineyards give power, Applejack tends towards perfume and finesse, and it usually shows the prettiest aromatics in the single vineyard range.
The fruit is hand picked and made in the Giant Steps manner, with wild ferments, a portion of whole bunches and maturation in French oak that supports rather than dominates.
Expect a fragrant nose of rose petal, cherry and strawberry, with pomegranate, freshly turned earth and a light dusting of baking spice. The palate is medium bodied and silky, with juicy red and blue fruits, five spice warmth and a savoury, herbal edge. The volcanic soil shows through in fine, spicy tannins that stretch out the finish. Lovely now with a short decant, and good with duck, pork belly or roast mushrooms.
