Carelle sous la Chapelle takes its name from its position on the slope, sitting below the little chapel above the village of Volnay. It is a premier cru known for finesse rather than power, with shallow, stony limestone soils that produce wine of unusual delicacy and lift.
This is Volnay at its most graceful. The nose is floral and high toned, all rose petal, violet, red cherry and wild strawberry, with a fine chalky mineral note behind. On the palate it is light footed and silky, tannins almost powdery, acidity bright and clean, the finish long and quietly persistent.
The Clerget family have farmed in Volnay since 1268, and Thibaud Clerget, the twenty eighth generation, has run the domaine since the 2015 vintage after training with Henri Boillot, Domaine Drouhin in Oregon and Hudelot-Noellat. Serve it with poultry, veal, salmon or a delicate mushroom dish rather than anything too robust.
