100% destemmed. Cold maceration with whole berries (more than 60-70% of the fruit is
whole berries) at 10°C for seven days to extract the colour and the best flavours. Then,
fermentation with few pigeages (to get the elegance and finesse of the fruit) until pressing
at low pressure. 15 months in oak (10% new, the rest one year old). No racking (aged on the lees to
keep all the elements of the wine and retain fruit freshness) until the final blend before bottling at the
domaine. A fine clean even purple. The bouquet is attractively perfumed yet fresh rather than overtly ripe. Fresh
raspberry, quite firm in both tannin and acidity, good long finish, just a little wood showing at the back
