Domaine Guilbert-Gillet Savigny-lès-Beaune Échalas Rouge 2023 750ml
Échalas takes its name from the way the parcel is grown. Rather than the wire trellising used almost everywhere in modern Burgundy, these vines are trained up individual stakes, an old and labour intensive method that has to be worked entirely by hand. Domaine Guilbert-Gillet ploughs the parcel with horses, and this cuvée is the estate's clearest statement of how it likes to farm.
Benjamin Guilbert set up the domaine in 2020 with René Gillet after training in Mâcon and Montpellier and working at estates including Château Smith Haut Lafitte, Domaine de Montille and Clos des Lambrays. He farms 3.6 hectares around Savigny and Chorey organically. At harvest three selections are made, the Pinot Noir is completely destemmed and given a long, slow maceration, then pressed gently and matured at least eighteen months in barrel without racking before gravity bottling.
The wine is pure and beautifully lifted. Red cherry, cranberry and wild strawberry carry notes of violets, blood orange and crushed stone, with fine, sinewy tannins and a long, saline finish. Drink it with roast duck, veal or a mushroom risotto.
