Aligoté has spent most of the last century as Burgundy's forgotten white grape, but in the hands of growers willing to farm it properly and pick it at the right moment it makes wines of genuine cut and character. Aux Boutières is Domaine Guilbert-Gillet's take, drawn from old Aligoté vines.
The domaine was founded in 2020 by Benjamin Guilbert and René Gillet and works 3.6 hectares around Savigny and Chorey. Benjamin trained in Mâcon and Montpellier and worked at Château Smith Haut Lafitte, Domaine de Montille, Domaine Guigal and Clos des Lambrays before starting out on his own. The vineyards are farmed organically and by hand, the fruit is sorted carefully and pressed slowly, and the wine is matured in barrel without racking before being bottled by gravity.
Expect something bright and appetising. Lemon, green apple and white pear are cut with a saline, chalky edge, while the old vines and long élevage give a texture that carries well past the usual expectations for the grape. Serve it cold with oysters, goat's cheese or fried seafood.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
