Domaine Faiveley was founded at Nuits-Saint-Georges in 1825 and is run today by the seventh generation, Erwan and Eve Faiveley. Chambolle-Musigny is the most perfumed of the Côte de Nuits villages, and this village wine is built from a rigorous selection of parcels on stony soils composed mainly of limestone.
Ageing runs to fourteen months in French oak, between a fifth and a third of the barrels new, followed by a further two months in stainless steel before bottling. The nose is fresh and alluring, with ripe cherry and red berry fruit set against subtle toast. The palate follows the same line, elegant and distinguished, with fine tannins and a lightness of touch that is pure Chambolle.
A wine of finesse rather than force. Serve it with roast poultry, veal, duck or lighter game, and give it a brief decant if you are opening it young.
