Domaine du Pélican is the Jura project of Guillaume d'Angerville, scion of the famed Domaine Marquis d'Angerville in Volnay. Founded in 2012 in the village of Montigny-lès-Arsures, the estate quickly established itself as one of the leading addresses of the Arbois appellation, working organically across a small collection of well-positioned old-vine parcels.
This Savagnin Ouillé is made in the topped-up, non-oxidative style, where the barrels are kept full throughout ageing to prevent the formation of the veil of yeast that defines traditional Jura whites. The result is a fresher, more linear expression of Savagnin that highlights the grape's natural minerality and structure rather than the savoury, sherry-like character of its sous voile counterpart.
The wine opens with aromas of citrus zest, white peach, quince, crushed herbs and wet stone, lifted by a hint of green almond and exotic fruit. The palate is taut and saline, with bright acidity, a gently waxy texture and a long, mineral-driven finish marked by flint and fennel seed. A versatile partner for seafood, soft cheeses and lightly spiced dishes.
