Bouzeron is the only appellation in Burgundy given over entirely to Aligoté, and it exists in large part because this domaine spent years arguing that the grape deserved a village of its own. The plantings here are the superior Aligoté Doré strain, farmed on the limestone slopes around the village, and the wine they produce bears almost no resemblance to the thin, sharp Aligoté that gave the variety its old reputation.
The nose is fresh and finely scented, with lemon, white peach and a note of crushed herbs. The palate is dry, taut and beautifully balanced, with a chalky texture, real length for a wine of this weight and a clean, mouth-watering finish that makes it an outstanding partner for shellfish.
Domaine A. et P. de Villaine is owned by Aubert and Pamela de Villaine, with Aubert's nephew Pierre de Benoist managing the estate for more than twenty years now. The vineyards have been certified organic since 1986, remarkably early for Burgundy, and Pierre has taken things further with biodynamic trials. Aubert de Villaine's name is long associated with Domaine de la Romanée-Conti, which makes his decades of advocacy for humble Aligoté all the more telling.
