Erythrite is the flagship red from Domaine des Ardoisières, made from 100% Mondeuse Noire — Savoie's emblematic red grape variety. From the domaine's steep, biodynamic terraces in Cevins in the French Alps, this is one of the most serious expressions of Mondeuse in production today.
Half the fruit is fermented as whole bunches with indigenous yeasts before the wine is aged for 18 months in old oak barrels (two to ten years old), with time also spent in amphora and foudres. The result is a structured, deeply coloured red with dark fruit, spice and violet aromas, firm tannins and the bracing alpine freshness that sets this domaine apart. Bottled with minimal sulphur, no fining and no filtration.
