Grand cru is the summit of Chablis, a narrow band of steep, south facing slopes on the right bank of the Serein where Kimmeridgian limestone sits close to the surface. Domaine Christian Moreau hold around five hectares here, with parcels in Blanchot, Les Clos, Valmur and Vaudesir, and this bottling draws on those holdings.
The step up from premier cru is one of depth rather than volume. The nose is complex and slow to reveal itself, moving from citrus and white peach through white flowers, almond and honey to a powerful struck flint and oyster shell minerality. The palate is broad and layered but held on a taut mineral spine, with a saline, seemingly endless finish.
The Moreau family have been part of Chablis since 1814, when Jean Joseph Moreau founded the merchant house of J. Moreau et Fils. The business passed out of their control from the 1970s, and in 2002 the estate and its vineyards came home. All twelve hectares are farmed organically. This will reward several years in the cellar; serve it with lobster, scallops, poultry in cream or a well aged Comte.
