COS is one of the most influential producers in Sicily, based in the town of Vittoria in the island's south-east and farming biodynamically since the early 2000s. Cerasuolo di Vittoria is Sicily's only DOCG, and this classic blend of Nero d'Avola and Frappato is a benchmark example.
Made with native yeasts and raised in the estate's signature understated style, it is fragrant and beautifully balanced. Expect aromas of red cherry, wild strawberry and pomegranate, lifted by rose, pepper and smoky herbs. The palate is silky and juicy, with ripe red fruit, a savoury twist, supple fine tannins and a fresh, lightly bitter finish that keeps you coming back.
A wonderfully versatile food wine, it pairs beautifully with charcuterie, tomato-based pasta, grilled meats and roast vegetables, and takes well to a slight chill.
