Brisefer is one of the lieu-dit bottlings that traces Dehours back to its roots, taking its fruit from a single Chardonnay parcel first established by Jerome Dehours' grandfather. The Chardonnay vines here date from 1966 and sit on clay-rich ground, which lends the variety an extra measure of breadth and creaminess that you do not usually find in the chalkier parts of Champagne. As with the other parcel wines, it draws on a réserve perpétuelle, a standing reserve topped up from each successive harvest so the cuvée keeps a consistent depth of flavour.
The nose leads with lemon curd, white flowers and toasted hazelnut, gathering a light note of beeswax with air. On the palate it is broad and creamy through the middle, carried by a fine bead and a thread of citrus acidity, then finishes long, dry and faintly saline in keeping with the extra brut dosage.
The Dehours family has worked the left bank of the Marne Valley for four generations, based at Cerseuil in the commune of Mareuil-le-Port about 15 kilometres from Epernay. Jerome Dehours farms roughly 14.5 hectares divided into some 42 parcels across Mareuil-le-Port, Oeuilly and Troissy, on clay and sandy soils resting over limestone. Bottling individual sites separately is central to the house philosophy.
