Cramant is the grand cru the Mignon brothers call home, and it is the softest and most immediately beguiling of the great Côte des Blancs villages. A deeper topsoil over thick chalk gives Chardonnay grown here a creamier texture and a floral lift that sets it apart from the sterner wines of Avize and Le Mesnil, and the mousse is famously fine.
Aromas of white flowers, lemon curd and ripe pear open onto almond cream and a light pastry note built by two years in barrel before bottling. The palate is silky and gently expansive, with a delicate bead, a chalky undertow and a long, dry finish that stays elegant rather than forceful.
Les Frères Mignon is the project of brothers Florent and Julien Mignon, launched in 2015 after generations of selling the family's fruit to the big champagne houses. Their holdings are roughly 90 per cent Chardonnay in Avize, Cramant and Cuis, with a small amount of Pinot Noir in Cumières, all spontaneously fermented and bottled unfined and unfiltered.
