Domaine Camille et Guillaume Boillot is a family project launched in 2021 by Guillaume Boillot, son of Henri Boillot, and his wife Camille, who descends from a long line of Pommard vignerons. Based in Meursault, the domaine works across the Cote de Beaune, and this Volnay Premier Cru comes from Les Champans, one of the appellation's most highly regarded climats, sitting on the mid-slope where limestone and clay give the wines both finesse and structure.
This is classic Volnay Pinot Noir, fragrant and silky in style. Expect red cherry, raspberry and wild strawberry fruit lifted by violet and subtle spice, with the gentle, precise extraction that the Boillots favour through their use of whole-bunch fermentation. The palate is supple yet finely framed, with fresh acidity and soft, polished tannins carrying a long, perfumed finish.
A beautiful match for roast duck, guinea fowl or pork, as well as mushroom dishes and soft washed-rind cheeses. Decant for half an hour to let the aromatics unfurl, and serve slightly cool to highlight its elegance.
