The Underhill Shiraz is a single-block wine from Yarra Yering, drawn from an 8-acre vineyard planted in 1973 on an adjacent property purchased by founder Dr Bailey Carrodus in 1987. The site's gentle west-facing slope and clay-based soils are ideally suited to cool-climate Shiraz, with a unique clone whose origins remain unknown.
A perfumed, medium-bodied, distinctly cool-climate style. Expect aromas of blue and black plum, violets, graphite, aniseed, licorice spice, cured meat and a whisper of smoky char, with a fruit-driven palate, faint oak seasoning and a subtle stalk grip.
Hand-harvested and sorted, with half the block fermented and matured in a 3,500L oak foudre (including a proportion of whole bunches), the balance in half-tonne open fermenters with twice-daily hand plunging. Aged 12 months across foudre and French oak puncheons (around 10% new).
