This wine is meticulously crafted from a blend of two distinct vineyards, both employing dryland farming techniques on bush vines. The Joubertskloof Valley in the Paardeberg region contributes 90% of the final composition, sourced from 50-year-old vines planted on decomposed granite soils with a south-facing orientation. The remaining 10% hails from 23-year-old vines in the Aprilskloof Valley, also in Paardeberg, situated on a 350m ridge with rockier, granitic soils. Grapes are handpicked during the early morning across four different dates and subsequently chilled for 24 hours. Following bunch sorting, 15% of the harvest undergoes whole cluster fermentation, while the remaining 85% is fermented as wholeberries in open-top fermenters. Natural fermentation initiates after a three-day cold soak, with daily extraction. The wine remains on the skins for 14 days before being gently pressed and transferred into 500 L and 300 L old oak barrels for malolactic fermentation. After an 8-month maturation in barrels, the blend is finalized and further aged for two months in concrete prior to bottling.
