From Terre à Terre, the family estate of Xavier Bizot and Lucy Croser, working from their Crayères Vineyard in Wrattonbully. The site, planted in 2004 on a north-south limestone ridge under terra rossa topsoil, takes its name from the chalk cellars of Xavier's native Champagne.
A reserve-level claret-style blend of Cabernet Sauvignon, Shiraz and Cabernet Franc from the close-spaced Crayères Vineyard, with the proportions adjusted vintage by vintage to capture the strengths of each season. Expect a deeply coloured, classically Australian red with blackberry, mulberry, plum, spice, graphite and floral lift, leading into a tightly focused, mineral-edged palate with a vast spread of fine, dusty tannins and a long, structured finish built to age.
Hand-picked, with each variety processed separately and fermented in open-top vessels with daily plunging or boards used to keep the cap submerged. Aged for around 15 months in French oak barrels (small and large) before assembly and bottling.
