From Savaterre, a small Beechworth winery established in 1996 by Keppell Smith on a hillside site just outside the historic town in northeastern Victoria, sitting opposite the celebrated Giaconda. Keppell came to winemaking from a background in finance, drawn by the Beechworth combination of decomposed granitic 'buckshot' soils, mild summers, cool elevation and the rolling foothills of the Victorian Alps. The Savaterre Chardonnay is listed in Langton's Classification of Australian Wine.
Chardonnay is planted at very high density (around 7,500 vines per hectare) on poor, well-draining granite over clay soils, naturally limiting yields to under 4.5 tonnes per hectare. The Savaterre Chardonnay is a powerful yet finely structured wine in the Old World mould, with stone fruit, citrus peel, hazelnut, flint and French oak nuance, leading into a long, mineral-driven palate built to age.
Farming is low-input and biodynamic in approach. The fruit is basket-pressed with no added yeasts, with wild fermentation in barrel and around 18 months ageing on the lees in French oak barriques, followed by six months in bottle before release.
