Pierre-Yves Colin-Morey is one of the most admired white winemakers in Burgundy, working out of Chassagne-Montrachet with a reputation for precise, mineral-driven Chardonnay. This Bourgogne Hautes Côtes de Beaune Blanc is drawn from the cooler, higher-altitude slopes above the Côte de Beaune, a source of bright, energetic whites made in his signature style.
It pours a pale straw gold and opens with delicate aromas of white peach, pear and citrus zest, lifted by white blossom and a subtle waft of toasted hazelnut. The palate is fresh and finely tuned, with lively acidity, a creamy lees-worked texture and a fine thread of chalky minerality running through to a long, elegant finish.
A poised and versatile white that pairs beautifully with roast chicken, grilled fish or soft cheeses.
