Bass Phillip is one of Australia's most revered cool-climate estates, founded in the hills of South Gippsland by Phillip Jones and built on a Burgundian philosophy of low-intervention viticulture and honest site expression. In recent vintages the wines have been crafted alongside celebrated Gevrey-Chambertin vigneron Jean-Marie Fourrier, whose approach draws on the purity-focused teachings of the great Henri Jayer.
The Estate Chardonnay is drawn from mature vines grown on the property's cool, high-rainfall slopes. It is a wine of restraint and detail, showing grapefruit and white peach, subtle struck-match and hazelnut complexity from wild fermentation and time in French oak, and a fine, chalky line of acidity. The palate is textural yet taut, finishing long and mineral.
Enjoy it with roast chicken, creamy pasta or grilled white fish. Serve lightly chilled and consider a short decant, as this Chardonnay rewards a little time in the glass.
