Salo began in 2008 as a side project between two Yarra Valley winemakers, Steve Flamsteed of Giant Steps and Dave Mackintosh of Arfion, built on a shared love of Chardonnay and a willingness to push at the edges of contemporary winemaking. The name means dirty and a little uncouth, which in the Australian idiom counts as a term of endearment, and it sums up their deliberately hands-off approach.
The fruit comes from the Upper Yarra, principally the Full Moon vineyard at Gladysdale, one of the cooler and higher corners of the region. Intervention in the cellar is kept to a minimum so that texture and complexity are allowed to develop rather than being polished away.
The result is a Chardonnay with genuine character: grapefruit and white peach cut with struck match and flint, a taut mineral line through the middle and a savoury, chewy texture that lingers. Serve it with roast chicken, seafood, pork or a washed rind cheese.
