Joseph Colin, son of the celebrated Marc Colin, makes a wide range of cuvees from his small domaine in the Cote de Beaune, with Saint-Aubin at its heart. Compendium takes its name from the way it is assembled, drawing together fruit from several different parcels across the appellation to build one harmonious white, a Saint-Aubin made entirely from Chardonnay.
In keeping with Colin's pure, minimalist style, the wine is fresh, balanced and precise. Look for crisp orchard fruit and citrus, a whisper of white flowers and pastry, and a medium-bodied palate carried by bright acidity and a saline, mineral finish that nods to its limestone soils.
Serve well chilled with grilled fish, roast chicken, creamy pasta or soft cheeses. It drinks beautifully now and will hold its poise over the next few years.
