Saint-Romain sits in a high side valley behind the Côte de Beaune, where cooler conditions and poor, limestone-rich soils produce taut, expressive Chardonnay. Jean-Marc Pillot's La Périère comes from a single vineyard in this elevated setting and is made in very small quantities.
The wine shows the freshness of its altitude, with lemon zest, green apple and white flowers over a stony, chalky core, yet it carries a little more weight and power than is typical for the appellation. A bright, citrusy acidity drives the finish, making it a fine partner for seafood and lighter dishes.
Domaine Jean-Marc Pillot is based in Chassagne-Montrachet, where Jean-Marc, the fourth generation of his family to make wine, has been in charge since 1991, now working with his son Antonin. Beyond the family's Chassagne and Puligny holdings, a few cuvées such as this one extend the range to well-sited vineyards in neighbouring villages, made with the same careful, hands-on approach.
