Les Baudines sits at the far southern end of Chassagne-Montrachet, bordering Santenay, at the very top of the slope. Its high position and lighter late-afternoon sun than the central Chassagne premier crus give wines of raciness and fine breed rather than heavy structure. Jean-Marc Pillot's holding is small, around 0.15 hectares of Chardonnay planted in 1975.
This is the most purely mineral wine in the Pillot range, with a cool, stony character, citrus and green orchard fruit, a hint of white flowers and a subdued, elegant texture. Its precision and tension make it a wine that unfolds steadily with time in bottle.
The Pillot family has worked vines in Chassagne-Montrachet for four generations, and Jean-Marc has run the domaine since 1991, now with his son Antonin. Whites are picked by hand, fermented in barrel with indigenous yeasts and aged on fine lees before a final spell in tank, with new oak kept to a modest share so the character of each site comes through.
