A Friulian-inspired white blend from Elm, the project of young winemaker Madeleine Marson. Elm pays tribute to Madeleine's upbringing with her two sisters Emily and Laura (hence E-L-M) in the Yarra Valley and Heathcote, where winemaking and the traditions of the Italian family table were strongly held. Madeleine completed a long apprenticeship with her father Mario Marson and together they run Vinea Marson in Heathcote, where the Elm wines are made.
A blend of Pinot Bianco, Malvasia Istriana and Friulano from a picturesque vineyard on the banks of the Ovens River in the Alpine Valleys of north-eastern Victoria - varieties typical of north-eastern Italy's Friuli region. Expect a rich, complex, food-friendly dry white with meadow flowers, honey, cinnamon and nutmeg on the nose, a textural palate with typical phenolic diversity, and very good length through a savoury, lingering finish.
Hand-picked, destemmed and inoculated on-site with non-saccharomyces yeast for bio-protection, then cool-soaked for 48 hours before separate pressing into French and Hungarian oak barrels and stainless steel tanks. Wild-fermented, with bâtonnage during the barrel-aged portion, then aged for around 9 months in the same mix of vessels before racking, fining, filtering and bottling.
