Eleni and Edouard Vocoret met during a harvest in New Zealand, then returned to Chablis to establish their own domaine, building it around parcels from Edouard's family holdings. Their Chablis 1er Cru Les Forêts comes from a Premier Cru site on the right bank, grown on the clay and limestone soils that give Chablis its hallmark tension and stony character.
Made from Chardonnay, the wine offers a nose of citrus fruit and white flowers with a subtle reductive note, while the palate combines a pleasing viscosity with generous citrus and a touch of anise. It strikes a fine balance between roundness and the taut, mineral freshness for which Chablis is prized.
Serve well chilled as an aperitif or alongside oysters, fresh seafood, white fish or goat's cheese. It has the structure to develop further in the cellar over the coming years.
