Domaine Eleni et Edouard Vocoret was established in 2013 when Edouard Vocoret and his wife Eleni took over a small piece of Edouard's family holdings in Chablis to pursue their own artisanal, farming-focused vision. Les Butteaux is one of their most treasured Premier Cru sites, a parcel of old vines rooted in the Kimmeridgian limestone soils that give Chablis its character.
Made entirely from Chardonnay, the wine is hand-harvested, whole-cluster pressed and fermented with native yeasts, then raised in older barrels before bottling unfined and unfiltered with minimal sulphur. The result is a white of depth and intensity, with citrus and orchard-fruit notes carried by a taut, stony mineral drive and a long, saline finish.
Serve well chilled with oysters, grilled fish, scallops or a platter of fresh shellfish. It has the structure to develop further in the cellar over the coming years.
