Domaine Raoul Gautherin & Fils has been making wine in Chablis since 1585, with fourteen generations of the family working these vineyards. The estate produces nine wines across the four tiers of the appellation, and this old vine village Chablis sits a step above the standard bottling.
The fruit comes from Chablis vineyards planted more than thirty five years ago, on the Kimmeridgian marl and fossilised oyster shell that gives the region its character. In keeping with local tradition the wine is fermented in tank and then aged for ten to eleven months on fine lees, with the approach adjusted each year according to the weather, the health of the fruit and the balance the vintage delivers.
Old vines give it extra depth without dulling the edge. Lemon, green apple and white pear are joined by oyster shell, chalk and a subtle nutty richness from the lees ageing, and the finish is dry, saline and long. Serve it with oysters, seafood, roast chicken or a soft goat's cheese.
