Les Clos is the largest and, for most people, the greatest of the seven grand cru climats of Chablis. It occupies the steep, south west facing heart of the right bank slope above the town, on Kimmeridgian marl thick with fossilised oyster shells, and it produces the most powerful and long lived wines in the appellation.
Domaine Raoul Gautherin & Fils has been growing here since the late sixteenth century, across fourteen generations of the family. The estate makes only around twelve hundred bottles of Les Clos a year. Winemaking follows the Chablis tradition closely, with the vinification adjusted each year to the shape of the vintage and the wines given a long rest on fine lees before bottling.
This is Chablis at full stretch. Lemon, white peach and quince sit over oyster shell, wet stone and a smoky, flinty reduction, and the palate is broad and powerful yet drawn tight by the acidity that defines the region. It needs time, and will keep unfolding for fifteen years or more in a good cellar.
