Montmains is one of the best known premier cru climats on the left bank of the Serein, opposite the grand cru slope, where the vineyards face south east across steep Kimmeridgian ground. It is a site associated with tension and precision rather than weight, and Domaine Raoul Gautherin & Fils draws this cuvée from three parcels of vines aged between forty and fifty years.
The Gautherin family has been growing in Chablis since 1585, across fourteen generations, and the domaine makes nine wines spanning Petit Chablis through to three grand crus. Vinification here is traditional and adapted to each vintage, with the wine raised on its fine lees to build texture before bottling.
The result is taut and beautifully detailed. Lemon zest, grapefruit and green apple lead, with white flowers, oyster shell and a distinct wet stone minerality behind them, and the finish is bracing, dry and long. Excellent with shellfish, white fish or a plate of charcuterie, and it will develop well over the next decade.
