Domaine Moreau-Naudet is a 26-hectare Chablis estate based in Préhy and Courgis that works biodynamically. The domaine was taken over from father Roger by Stéphane Moreau in 1993; following Stéphane's untimely death in 2016, his wife Virginie and longtime assistant 'Coco' have continued his approach. The estate is one of only a handful of Chablis producers to hold two stars in the RVF guide.
100% Chardonnay on Kimmeridgian limestone from 20- to 30-year-old vines across the Chablis AOC. Expect a taut, energetic Chablis with bright citrus, white flowers, green apple and the signature chalky, saline minerality of the appellation. Precise and long.
Late-harvested fruit is fermented with wild yeast and never chaptalised. Élevage is extended — up to 24 months — in stainless steel for AOC Chablis (with a small proportion of seasoned oak possible in some cuvées), producing a concentrated, classically built wine.
