Domaine Moreau-Naudet dates back to 1950, when Marie Naudet and René Moreau married, and was elevated by Stéphane Moreau after he took charge in 1991. Virginie Moreau has led the domaine since 2016, maintaining organic treatments, hand-tended vines, manual harvesting and low yields, with a deliberately later harvest to capture full ripeness.
Vaillons is one of the best-known Premier Crus on the left bank, its south-east facing slopes sitting close to the town of Chablis on classic Kimmeridgian limestone and marl. The domaine's Vaillons is fermented with natural yeasts and rested on its lees, showing ripe lemon, green apple and white blossom with a gently textured palate, a salty, stony edge and lively, refreshing acidity.
Serve with oysters, steamed mussels, grilled fish or a soft goat's cheese, or cellar for a few years to develop further complexity.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
