La Princée is the village Saint-Aubin from Domaine Hubert Lamy, one of the most highly regarded estates in the Côte de Beaune. Under Olivier Lamy the domaine has become known for an obsessive plot-by-plot approach, working high-density vines, precise harvest timing and gentle oak handling to draw the maximum of energy and minerality from limestone-rich soils.
The cuvée is hand-harvested and whole-bunch pressed, with a long, slow élevage in older barrels. Lees work is calibrated for tension rather than weight, with very little new oak in play. The aim is a wine of transparency, where the chalky lift of Saint-Aubin terroir speaks more loudly than any winemaking signature.
The 2023 offers a precise, taut expression of Chardonnay: lemon zest, grapefruit, fresh apple and pear lifted by white flowers, hazelnut and wet stones. The palate is bright and saline, with crystalline acidity, an orchard-fruit core and a long, finely chiselled finish that rewards a year or two in the cellar.
