Benjamin Guilbert founded Domaine Guilbert-Gillet with René Gillet in 2020 after a training that took in oenology school in Mâcon, a diploma in Montpellier and stints at Château Smith Haut Lafitte, Domaine de Montille, Domaine Zind-Humbrecht, Domaine Trimbach, Domaine Guigal and Clos des Lambrays. He now farms 3.6 hectares around Savigny and Chorey, and the wines have built a following remarkably quickly.
Les Perrières is named for the old stone quarries that once worked this ground, and the shallow, rocky limestone soil is exactly what Chardonnay wants. Farming is organic and sustainable, with hand work through the growing season and careful sorting at harvest. The fruit is pressed slowly and gently, and the wine is matured in barrel for at least eighteen months without racking before being bottled by gravity.
The style is taut and mineral rather than opulent. Citrus, white peach and green apple sit over white flowers and a light struck-match reduction, with lees derived texture through the middle and a long, chalky finish. Very good with oysters, scallops or roast white fish.
