A Premier Cru white Burgundy from Domaine Génot-Boulanger, the 22-hectare family estate based in Meursault and now run by the fourth generation, Aude and Guillaume Lavollée. The domaine has moved towards organic farming and biodynamic practices, working across more than 30 appellations from Mercurey up to Chambolle-Musigny.
Les Bouchères is one of Meursault's smallest and stoniest Premier Cru sites, with very shallow topsoil over limestone bedrock on a steep south-east-facing slope. The domaine owns a 0.61ha parcel of Chardonnay planted in the 1990s. Expect a tense, saline Meursault with yellow fruit, desiccated orange peel, fine herbs and crushed stone, backed by linear acidity and a subtle reduction.
Hand-harvested and whole-bunch pressed, with fermentation in French oak (around 10–15% new) and around 12 months on lees, followed by several months in stainless before bottling unfined and unfiltered.
