Domaine Faiveley has been a fixture of Burgundy since 1825, and under the seventh generation, Erwan and Eve Faiveley, its white wine programme has become one of the estate's real strengths. Chassagne-Montrachet is one of the great white villages of the Côte de Beaune, and this is the domaine's village bottling from the commune.
The limestone rich soils here give Chardonnay both weight and cut. The wine is fermented in French oak barrels, a portion of them new, then aged on lees to build texture. The colour is a bright pale gold, the nose finely detailed with white peach, honeysuckle and a touch of flint alongside gentle oak, and the palate is pure, concentrated and creamy while staying balanced, closing with genuine length.
Pour it with roast chicken, poached or grilled fish, scallops, or a soft washed rind cheese. Approachable now and well worth a few years in the cellar.
